
Some days you just KNOW you need as much iron as possible, and this was one of those days. I’ve learned over the years to listen to my body – to when it’s extra EXTRA fatigued and tired, especially. I tend to be low in two things – hydration (DUH) and iron (also duh).
I grew up eating liver and onions, so when I saw it at my grocery on the way home, I grabbed it and a pack of beets.
Simply made – a dusting of flour and seasonings, fry in bacon fat and done! I added in the beet tops (chopped), garlic, onion and some tomato for sweetness, while the actual beets were boiling away.

And – voila! A lovely light lunch. Iron PACKED, with a bit of lemon water to help it all soak in. All in all, about 150% of my daily required, so we’ll see if/how the energy picks up!
